Sautéed Potato Wedges

Ingredients

6 red potatoes

3 tablespoons olive oil

1 tablespoon butter

1 medium zucchini thinly sliced

1 small green pepper cut into 1- inch cubes

1 small yellow/red pepper cut into 1- inch cubes

6 cherry tomatoes

2 tablespoons finely chopped Italian parsley

Salt and freshly ground pepper

Directions

Cut potatoes into 1-inch wedges. Heat oil and butter in a large wide frying pan over high heat. when piping hot, add all the potatoes. Reduce heat to medium and fry, stirring often, until almost fork-tender and golden brown, about 30 min.

Immediately drain all but 1 tbsp fat from pan. Then add zucchini, green and yellow peppers and sauté until heated through, about 1 to 2 min. Add tomatoes and parsley and sauté for 1 min. more. Add salt and pepper.
